This easy Mediterranean Pasta Salad recipe is a twist on the classic, and includes exciting ingredients like sun dried tomatoes, kale, and salami. It is sure to become your new favorite pasta salad, and for good reason.
INGREDIENTS:
- 1 lb pasta, cooked al dente
- 1 cup mixed olives sliced
- ¼ cup olive oil (use the oil from the sun dried tomato jar for extra flavor)
- ¼ cup red wine vinegar
- 8 oz jar sun dried tomatoes, oil reserved
- 1 english cucumber, diced
- 1 (5 oz) container baby kale
- Dressing
- 1 tbsp fresh oregano, or 1 tsp dried
- 6 oz salami, sliced thin
- 4 oz feta, cubed
- 1 lemon, zest and juice
- 3 garlic cloves, minced
- ¼ tsp pepper
- ½ tsp sea salt
INSTRUCTIONS:
- In a small bowl whisk all of the dressing ingredients together until fully incorporated.
- In a large bowl, toss the dressing with all of the pasta salad ingredients.
