Whats up all of us! Amanda right here from antique house to New home sharing a bright and flavorful salad that will help you get thru the previous few weeks of winter! This spiralized Greek Salad is mild and has me looking forward to the clean flavors of spring and summer. here in PA we probably gained’t see spring till at least April, so I want all the cheerfulness and freshness i will get!
Do you recognize that a real Greek salad doesn’t have lettuce in it? The famous version served in American restaurants provides lettuce to bulk it up and make it extra meal like, however a true Greek version leaves it out. i like Greek salads but admittedly, i'm in it for the calamata olives and the feta cheese. i am a massive salty fan and love the tangy chew they each add to the salad.
So whilst wondering up a salad to make for dinner lately, I decided to head heavy on my favored salty flavors and use them to pinnacle a large bowl of spiralized cucumbers! have you jumped on the spiralizing trend yet? I got a mini-spiralizer for Christmas and had been thinking up so many approaches to apply it. I think this Spiralized Greek Salad become a exceptional manner to inaugurate my new tool into my kitchen!
This salad is so healthy and light and you could clearly personalize it in so many methods! need to serve it as a meal? upload chook or salmon! need to take it to a potluck? Toss in some linguini and make it a pasta salad! Don’t love feta like I do? upload some clean mozzarella! I lightly dressed the salad with a lemon French dressing because i like lemon, however you can use your favourite Greek dressing in case you’d pick.
INGREDIENTS:
- 2 large cucumbers spiralized
- 4 oz feta cheese crumbled
- 1/2 cup cherry tomatoes halved
- 4 pepperoncini peppers sliced
- 1/2 cup kalamata olives
- juice of 1 lemon
- 3 tbsp extra virgin olive oil
- 1/4 tsp garlic powder
- 1/4 tsp Greek or Italian seasoning
- salt
- pepper
INSTRUCTIONS:
- Spiralize your cucumbers and then lay them flat on a paper towel. Sprinkle with salt and let the moisture come out. After 10 minutes, pat them dry.
- In a medium sized bowl add cucumbers, tomatoes, olives, feta, and peppers. Toss to distribute.
- In a small bowl, whisk together the olive oil, lemon juice, garlic powder, and greek seasonings. Whisk until it begins to thicken, about 30 seconds. Drizzle over salad and then sprinkle with black pepper.
